The cuisine

"At Benoit, drinking and feasting like kings"

The bistro cuisine has its products, its technics and its tradition.

The bistro cuisine is deeply anchored to the past tradition but is still very attractive for the food’s lovers of today. Since a century, Benoit embodies this culinary heritage with as much generosity as ever. In this place full of history and memories, adorned with large mirrors, engraved windows, columns, woodwork, you will enjoy the most typical dishes of the bistro cuisine, served in large porcelain plates. Come and have a tasty and cozy interlude out of the time.

The Benoit cuisine has its classics as : Calf’s head with ravigote sauce (sauce with boiled egg, vinegar, capers, tarragon, chervil, parsley and gherkins); Lucullus-style calf’s tongue (with foie gras) served with heart of romaine with mustard; Sauteed gourmet casserole of sweetbreads, cockscomb and kidneys of cockerel, foie gras and truffle jus; Loin of pork cooked in a cocotte with pumpkin au gratin and cooking jus; Pan-seared black pudding with raw apple and mashed potatoes; Snails in their shells with garlic butter and herbs…

The desserts are as generous as the main dishes : profiteroles, classic vanilla Millefeuille, Savarin in Armagnac, crunchy praline and chocolate delight with hazelnut ice cream…But also the Madeleines (muffins) that Franck Rotenberg, the director of the restaurant, brings still warm and in their molds to the guests…

Still now, the cuisine of Benoit is the illustration of excellence and authenticity. The cuisine of Benoit keeps its secrets with tenderness and respect, in a balance between tradition and transmission. The gourmets come from all around the world to experiment a meal in this animated place, the only Parisian bistro to have a Michelin star !
