Alain Ducasse at Benoit - The 20th anniversary

Twenty years ago, the Petit family entrusted the keys of Benoit, the legendary Parisian bistro, to Alain Ducasse and his team.

To celebrate this anniversary, Chefs Kelly Jolivet and Tom Laureau invite you to discover a menu of heritage and celebration, paying tribute to the generous bourgeois recipes that have shaped Benoit’s history for over a century.

Here are some explanations about the emblematic dishes of this anniversary menu:
The Lucullus veal tong is a flavorful combination of smoked beef tong, simmered in broth, with foie gras. Parisian-style lobster, cooked in a court-bouillon, is served with a vegetable macédoine. The Fillet of sea bass “à la Dugléré” (by Adolphe Dugléré, a student of Carême) is poached in a lightly covered fish stock with white wine over a bed of crushed tomatoes, diced onions, shallots, and chopped parsley. The cooking liquid is reduced and finished with butter to make a sauce.Albuféra sauce consists of foie gras and a reduction of cognac, white port, and Madeira. At Benoit, Alain Chapel’s recipe is served.
